The picture ain't that pretty, guys. Lots of yellow and gray. In retrospect, I should have used more jalapeno and maybe a garnish of more jalapeno for some color that pops. My food photography is still in the "painfully amateur" stage, so please forgive me. Next time I will attempt to garnish. This recipe is from Vegan Soul Kitchen, and I especially liked it because the seitan was very lightly crusted and not deep fried, but sauteed in just enough oil to make it crisp. Don't get me wrong, I love me some deep fried goodness, but not on weeknights anymore. As you may recall, I am weight-watching (sixteen pounds lost to date since November first). The jalapeno corn was crisp and had just enough of a kick from the jalapenos. The mashed potatoes were...well, mashed potatoes. Always good with a ton of garlic and some soy milk.
